With this wine we wanted to recover a winemaking heritage that existed in Priorat and that takes us back to the first bottlings of Cellers de Scala Dei. Vinified with 100% of the rapa, this wine represents the most ancestral vision of this variety. We harvest during the second week of October, in small boxes, with the crushed grapes (not whole). We ferment it in a small cement tank, mimicking the temperature peaks typical of fermentation processes in the last century, without adding yeast and pressing it in the cement tank itself. This wine is aged for 24 months in a 500-liter barrel.
