Scala Dei Heretge 2017

Since its re-foundation in 1973, our Scala Dei winery has been based on three fundamental pillars: altitude, soil and Grenache. However, the winery is also nourished by old Carignan vines, planted on slate slopes at the beginning of the 20th century. Scala Dei Heretge pays tribute to the winegrowers committed to the Priorat. The techniques of this heroic, mountain viticulture date back to the middle of the last century.

This wine comes from four different vineyards, all of them planted between Vilella Alta and Torroja just after phylloxera.
Therefore, the plants range in age from 80 to 117 years old. Part of these vineyards are south-facing, located on the typical slate costers, which include examples of the popular architecture of dry stone construction.



The winemaking process for this wine is similar to what we do at Cellers de Scala Dei with our Grenache grapes from historic vineyards. Basically, the idea is not to intervene, so that what the wine shows is the peculiarity of the terroir that is so characteristic of Priorat slate soils. Fermentation takes place in open cement vats, alternating pigeage (punching down) and pumping over depending on the daily tasting. This wine is fermented with 30% of the stems, which we are able to use as the bunches are harvested when they are fully ripe. It then remains in contact with the skins for 30 days, from vatting to pressing. Fermentation takes place with indigenous yeasts.
