To make the Blanc de Scala Dei we use three vineyards. The Macabeu comes from two slate vineyards and the Garnatxa from one of high calcareous clay.
With this opportunity to mix the two terroirs, we manage to give complexity to the resulting wine with the depth and minerality of slate and the freshness and elegance of clay.
From the best clusters selected from the Macabeu vineyards we make the Blanc de Scala Dei. After direct and gentle pressing at little pressure. The must is fermented at a low, controlled temperature in stainless steel tanks for 4 weeks.
